I know with the defi gauges that require the controller you can change the brightness on them to different levels. These gauges have an illumination wire coming out of them. Is it just 2 stages of brightness (headlights on/headlights off) or is there a way to tweak how dim they are by maybe hooking them up to the factory dimmer?

That is not something that I have done in the past myself. However you should be able to hook it up to the stock illumination/dimmer that controls either the stock gauge cluster or HVAC illumination to have control over the brightness.
