I've never heard of this before, but this guy my friend works with in a machine shop says the reason people with these cams need to relash the valves numerous times is because the valve springs can't handle the aggressive grind. Is this true? I really don't want to shell out for upgraded springs, but I will if I have to.

don't need new valve springs. stock should work just fine. the reason why people need to relash is because the lobe geometry has been altered from stock.

It wouldn't hurt to instal new springs, if not upgraded. I don't know if the 200 grind has the valves opening or shutting any quicker in addition to the increased lift and duration. If so, better springs will help the valves follow the cam lobes more accurately.
