I have heard the with coilovers one doesn't need to run sway bars... is this true? I would think that say bars would let you dial in the coils even more, no?

I dunno why anyone would think that. No matter how good your struts/coilovers are, you still need the sway bar to transfer forces back and forth between the two sides. The only reason people take them off is for the snow, where oversteer is a dangerous thing.
